Balloons fly once a day, at sunrise, weather permitting. That window lasts roughly 60–90 minutes and every part of it must be planned: which valley, which terrace, wind direction, backup spot.
I travel to Cappadocia from Istanbul, but I know the region like a studied set: Göreme's terrace houses, the sunset valley of Kızılçukur, the morning mist of Paşabağ. For elopement couples I recommend a two-day structure — one sunrise, one sunset — so you're insured against the weather.
